Got this to make an edible salt foam. Works great.

Cheap, safe, works well
Sucrose esters are a mystical energy field that binds foods together that normally wouldn't want to bind. They are also used to make very light foams, and are in the glaze that fruit is glazed with to stop it spoiling. Because of the fruit glaze connection they've been safety tested a lot by the FDA and the Europeans and seem to be safe. They are available under many different brands, and the price varies a lot. This is on the cheap end, and worked fine for me, I'd recommend it.

Excellent use for Salt Air Margaritas. 4 oz water 2 oz fresh lime juice 1.5 teaspoon salt 1.5 teaspoon Sucrose It's very important to use a good mixer, I recommend a Cafe Luxe Stainless Steel Milk Frother, Latte Maker & Drink Mixer - With 25-Recipe eBook & Batteries Takes about 8 seconds to whip up, then get a spoon and take the foam on top of your Margarita!! A cheaper substitute is Food Grade Soy Lecithin Powder (Molecular Gastronomy) ☮ Vegan ✡ OU Kosher Certified - 400g/14oz or Maltodextrin - 1 LB . The Soy has a slight brown tint to it but provides a better foam than Maltodextrin. The best is Sucrose, it makes the best foam and holds very well, but you have to decide if the price is worth it.

Interesting product
I used this product to make Jose Andres' Salt Air. I followed the instructions, but found that the solution was partially unstable. About half of the solution separated and part of the foam became crusted. However, the part that did become a more stable foam did create a fascinating effect of airy saltiness!

Easy to use! Used this when making salt foam.

Doesn't work as advertised.
This is an ingredient required to make Jose Andres' famous Salt Air (for a margarita.) Doesn't work. I've used another product from a different company (years ago, can't remember the brand) that actually worked really well. Total bummer.

SALT AIR MARGARITAS
LOVE this stuff!!! Works GREAT!!!! This recipe seems to be the best. I am able to make an almost infinite amount of salt air, I tend to have to throw some out. I know it's expensive, but it is worth it! ESPECIALLY, as a conversation piece at your next party! INGREDIENTS MARGARITA 1 ounce fresh lime juice 1 1/2 ounces blanco tequila Ice 1 ounce Cointreau or other triple sec SALT AIR 4 ounces water 2 ounces fresh lime juice 1 1/2 teaspoons Sucro 1 1/2 teaspoons salt I use a 2 speed KitchenAid immersion blender and have fantastic results every time!!!
